Two fond memories of Betsy come to mind instantly…
The first memory involves the five or six of us somewhere in the great outdoors, sitting around a roaring fire, after the kids had gone to bed, drinking coffee with a “splash” of Bailey’s Irish Cream and eating flaming hot baked potato’s topped with butter and a concoction of sour cream and spices that Betsy and my wife had come up with. No matter where Betsy moved her chair around the campfire, however, the smoke followed he. So, it would be Betsy on one side of the fire wrapped in smoke and the rest of us on the other side!
The other memory of Betsy that comes to our mind mind is sitting at the kitchen table on New Year’s Eve with Betsy making this ever so tasty concoction she had come up with called inside-out raviolis. It was a relatively easy dish to make but it had to be made by hand, and was very messy. However, Betsy would dive right in to make the ravolis, and I think she enjoyed making it as much as we all enjoyed eating it. This would become a tradition every Christmas or New Year’s Eve for many years.
